My boyfriend suggested I make him tomato basil soup one day. First of all, I hate tomatoes and second of all, I had no idea what tomato soup even tasted like. Nonetheless, I decided to give it a try. And guess what surprise surprise, it was DELICIOUS! The basil makes it taste like a margherita pizza. Yum.


  • 2 cups fresh basil
  • 1 1/4 lbs of cherry tomatoes (or grape)
  • 2 1/4 lbs of Roma tomatoes (or plum)
  • 8 cloves garlic
  • 2 yellow onions (white is fine also)
  • 4-5 cups of vegetable broth
  • Salt and black pepper


  • Preheat oven to 425 degrees
  • Cut tomatoes in half and place on a baking sheet drizzle with olive oil season with salt and pepper
  • Place onions and garlic in a separate baking sheet, drizzle with olive oil
  • Roast onions and garlic for 30-35 minutes and tomatoes 40-45 minutes
  • Pour the onions, garlic and tomatoes into a large pot
  • Add 4 cups of vegetable broth and the fresh basil, season with salt and pepper
  • Bring to a boil and reduce heat to simmer for 20 minutes
  • (You may add another cup of vegetable broth depending on consistency preference)
  • Blend soup in a vitamix or immersion blender in small batches at a time
  • Voila, top it off with hemp hearts for extra protein and enjoy with crackers
